I've been starving all day. Argh!

I couldn't decide what to do for dinner so I went grocery shopping after work. They had chicken leg quarters on sale and I'm usually totally against handling raw meat so I managed to get the chicken from the container to the pan using a clever arrangement of forks. I win!

On a whim, I bought a jar of chunky medium salsa and decided I would just throw the salsa on top of the chicken and some potatoes and bake it for a while. I don't know how it's going to taste, but holy crap, it smells good.

I also put a whole bunch of delicious asparagus in a packet of aluminum foil with a bunch of butter, pepper, garlic, and lemon-dill stuff. That smells pretty awesome, too. The whole house smells like salsa and asparagus, and my mouth is watering as my stomach gurgles.

I just called Jen and she was at JFK/UMASS so that train had better go fast because I. Can't. Wait. To. Eat!

One of the standard things I cook is my salsa chicken. Boneless chicken breasts covered in Medium to Hot Salsa and sprinkled with the 4-cheese mexican cheese mix and then baked at 350 for 30 minutes.

Tasty, tasty stuff.

Mmm, it sure would have been tasty with cheese! And next time I think I will totally try hot salsa, because all the spiciness seems to have baked away.

It was especially yum on the couple of cut up potatoes I shoved in there, btw. Mmm!

Tip for handling icky things like raw meat. Use a latex glove. They can usually be found in the pharmacy section of the supermarket.
