I call tonight's foodage "Lazy Dinner Out of a Bag," although it's arguably better than any number of crap options I could have chosen. It is at times like this that I thank God for Trader Joe's.

1 lb. bag of precooked shrimp. 1 bag of frozen mixed vegetables with "asian" sauce (a combo of hoisin and soy mostly). 1 package of rice noodles. Boil. Mix. Heat.

I think I've had those rice noodles for several years now. I'm pretty sure I bought them in Columbus, but never came up with something to eat them with. I was going to use this Thai marinade out of a jar but then I realized the veggies came with sauce. Win win!

It probably could have used more sauce, since the quantity was scaled for the vegetables. There was definitely enough to coat the shrimp but the noodles? I added some more soy sauce and the end result was still pretty tasty. It took about 20 minutes (total) to prepare and cook, and likewise to eat. Mmmm.

Trader Joe's is the best for having prepared food without all of the ingredients in a lot of the traditional processed crap!

Ohh, that reminds me of this meal I've been eating a lot lately: cold asian noodles. You cook a pack of soba noodles or some other hearty asian noodle, run them under the cold water to cool them immediately and then toss with scallions, peanuts, and cooked chicken/tofu. Then whip up a sauce with soy sauce, rice vinegar, and a bit of peanut oil (and maybe some peanut butter if you're super into peanuts) and stir that in. Top with a handful of sesame seeds if you have em around. Toss in fridge. If you use the whole pack of noodles, you wind up with four servings. Hello, dinner and lunch!

Mmm, that sounds seriously yum! I love cold noodles on summer evenings. (I would skip the scallions, though, because scallions are onions and onions are, of course, evil!) But it sounds majorly good. You should totally cook for me. Like, all the time. Because I'm totally lazy.
